Fried Rice

Fried rice is such a simple recipe and you can really make it with anything, including changing the rice for cauliflower rice. Any variations can make a delicious flavour change. We love to make this the night before and put it in the fridge to let resistance starch form and serve it up for lunches the next day. It’s especially good in kids lunch boxes. - Serves 8

Ingredients

  • 6 cups of chopped veggies, such as Cabbage, Carrot, broccoli, cauliflower, capsicum, peas, onion. 

  • 500 g of Bacon, chopped

  • 2 cups of Rice

  • Coconut oil for cooking

Method 

  1. Rinse rice well under running water. 

  2. Cook rice using absorption method.

  3. While rice is cooking, cook bacon pieces and set aside.

  4. Use same pan to Stir-fry veggies in coconut oil.

  5. Once rise is cooked, drain.

  6. Mix through the cooked vegetables and bacon.

  7. Serve with some tamari sauce.
