Chicken and Leek Pie with Cauliflower Mash

A fortnightly household favourite!  Not only does this taste amazing it is pretty simple to make, plus you can make ahead of time. Make it up to step 8, put it in the fridge then throw it in the oven when you get home from kids’ sports or work. Too Easy!

Ingredients

  • 6 chicken thighs, chopped in chunks. 

  • 2 leeks washed and sliced 

  • 1 onion, chopped finely

  • 1 tbsp of dehydrated chicken bone broth mixed with 1/3 cup of water

  • 1 tsp of paprika

  • 1 tsp of Cumin

  • 1 tsp of turmeric plus a little extra for dusting

  • 1 tsp of garam masala

  • 2 tbsp of butter

  • 2 cups of cauliflower mash 

  • 2 egg yolks

Method 

  1. Pre heat oven to 180 degrees, and greases lightly a baking dish for you pie.

  2. In a frying pan add butter and sauté onion and leek. 

  3. Add chicken pieces and cook through.

  4. Add spices and broth and cook to reduce liquid.

  5. Add The chicken mixture to your dish. 

  6. Mix cooled cauliflower mash and 2 egg yolks in a blender until smooth.

  7. Put mash on top of the chicken and sprinkle with a little extra turmeric. 

  8. Place in over and cook for roughly 20 minutes.
